There is not such book on the market AFAIK. There is a book for Oracle Financials, which are the most used Oracle Apps book. Other than that the Oracle E-Business suite docs could be good start.
On Metalink there are manuals for almost every apps.
For Application DBA, you will need some development experience as well some business.
